The next time you attend your office party or are invited to a friend's house for dinner, volunteer to bring this tasty, lower calorie version of cheesecake. Sure to win you over, this desert is as good as it is good for you. Sure to wow everyone, in the end don't forget to let them know that it's a low fat recipe. This recipe is sure to be a hit with the figure friendly and non health conscious alike. Just set it on the table alongside all the other deserts and watch it disappear.
IngredientsCrust:
- 1 1/2 cup of chocolate or plain animal crackers
- 1 cup fat free Parkay butter spray
- 1/4 cup Xylitol sweetener
Filling:
- 4 (8 ounces) fat free or reduced fat cream cheese
- 1 1/2 cup Xylitol sweetener
- 1 Tbs. cornstarch
- 1 Tbs. vanilla extract
- 1 Tbs. lemon juice
- 1 cup egg substitute
- 1 cup fat free or reduced fat whipped cream
- 1/4 soy flour, or plain flavor protein powder
- 1/4 cup plain flavored fiber powder
Crust
- Preheat oven to 350 degrees F. Make crust by using a food processor or by crushing in a plastic bag, using a rolling pin or hammer.
- Combine crackers, butter spay and sugar substitute in a bowl. Spread in the bottom of a 10" springform pan and up 1 1/2 inch on the side.
- Bake in oven for 10 minutes. Remove from oven and place aside.
Filling
- Preheat oven to 350 degrees F. Using an electric mixer, blend soften cream cheese on low speed in a mixing bowl. Use spatula to scrape down side of bowl and paddle mixer.
- Add sugar substitute slowly and continue to beat until creamy, you can add more or less to suit your tastes.
- Add the eggs a little at a time and continue to mix on low speed until eggs are incorporated into the batter.
- Add cornstarch, fiber powder, and soy flour and continue to mix. Add vanilla extract and whipped cream and mix until blended.
- Pour the mixture into your crust and use the spatula to help scoop out the batter.
- Bake for 1 hour or the top is slightly brown.
- Remove from oven and let cool on wire rack. Place in refrigerator and let set before removing the sides.
This yummy desert can also be made into the creamy no-bake version by omitting the soy flour and cornstarch and substituting plain flavored protein powder. Also omit the baking process and chill mixture for several hours overnight. This delicious dessert can also be served with fresh berries or add fun ingredients such as sugar free chocolate chips, blueberries, figs, toasted pine nuts, pecans, black walnuts etc., to the mix before baking or chilling.
